Quiche van Brocolli, gehakt en bladerdeeg

Dit is een super simpel recept


5 eieren
200 ml room
1/2 limoen, sap
200 gr gehakt
300 gr brocolli
6 plakjes bladerdeeg  (ontdooid uit de diepvries)
2 uien (gesnipperd) 
2 tenen knoflook (gesnipperd) 
150 geraspte parmezaanse kaas (of andere kaas)
italiaanse kruiden (uit potje of verse)
vetvrij papier
oven voorverwarmd op 180 gC

bak het gehakt rul en zet apart
bak de uien tot die goud bruin zijn (niet te donker dat is bitter en vies)
snij de broccoli in roosjes (van ongeveer 3 cm)
kook gedurende 5 minuten hiervan 200 gram in water met beetje zout, laat het uitlekken



roer de room in een bakje terwijl je langzaam het limoensap erbij doet, zodra het dik is en de structuur heeft van kwark, dan is het goed.
doe dan de limoen-kwark met de eieren, een eetlepel italiaanse kruiden en de gekookte broccoli in een keukenmachine (of mix with staafmixer of mixer) en mix tot 1 geheel waar nog wat brokjes broccoli inzitten. Maak op smaak met zout en peper.
  
vouw wat bakpapier in de springvorm en bekleed het met plakjes bladerdeeg. Breng de uien in een laagje aan en dan het gehakt. 



Verspreid de niet gekookte roosjes hierover, en giet de het mengsel er op. Strooi de parma kaas erover en doe het in de oven. 

de baktijd is 35 minuten tot de kaas bruining is (niet te de donker kaas wordt ook snel bitter). De taart zal bol staan en luchtig zijn, dat zakt weer wat in als hij wat afkoelt. 

Snij in punten en lekker met beetje ketchup of tobasco.

Semifreddo "Snickers"

Semifreddo is an Italian desert that is semi-frozen. It is like a custard that is yet frozen but not hard. Basically it is made of eggs, sugar and flavour. In this version Snickers (or other candy bars without biscuits) can be used. 


INGREDIENTS
4 eggs separated
50 gram sugar
1 vanilla pod core
4 Snickers bars
50 gram dark chocolate
500 ml of double cream
pinch of salt


Chop 3 of the Snicker bars in chunks and melt them "bain-marie" with the dark chocolate. Stir once a while and make sure all the chocolate and caramel parts get mixed well.


Meanwhile.....  Put the egg whites in a bowl with a pich of salt and beat them (with an electrix mixer) until completely firm.
In another bowl stir the egg-yolks with the sugar and the vanilla core until completely smooth and silky.


Then in yet another bowl beat the cream until it is thick and 150% of its original volume.
Gently stir the yolk mixture into the egg whites, and stir until smooth. But be gentle enough to keep it fluffy. Then gently add the cream to this mixture to a nice custard.


Use half of the custard to mix with the molten chocolate and stir it well to make it smooth and creamy. Then pour both custards in a tray and swirl it a bit with a whisk to make a marble pattern.


Finally chop the 4th Snickers bar and and sprinkle them all over. Chill it down in the freezer for around 4 hrs and serve it. If too hard to scoop leave it out for half an hour and serve it.

Hong Kong Pancakes

Hong Kong pancakes are made with peanut butter, honey, and icing sugar:
The recipe is for 2 person serving each 2 pancakes. It is not the original where you should put the sugar with the filling, but I like them this way :)


PANCAKES 
300 grams self raising flour
1 teaspoon salt 
1 egg 
1 tablespoon cooking oil 
about 300 ml milk
cooking oil for baking them.


FILLING
3 tablespoon peanutbutter
1 tablespoon hot water
honey
icing sugar
butter


BAKING THE PANCAKES
Put the flour into a large bowl. Make a hole in the center and add the egg and half the milk. Stir with a whisk from inside until a paste. Then, little by little, stir in the rest of the milk and should have the texture of cream soup and is easy to pour.
Use a skillet with a thick bottom, add a little oil (2 teaspoons max.) and pour the mixture in with a soup ladle (around 2 mm thick). Bake  over medium high heat, within a minute the top should look dry the bottom should be golden brown. Then turn it over and bake the other side. 
Stir the water and peanut butter in a bowl until a smooth butter-like texture
Spread some butter over the pancake, then a layer of peanutbutter and drizzle with honey.
Roll it up, and dust it with icing sugar. 


They taste best when warm. Using hot plates or keeping them warm in an oven at around 150 C is recommended.
