Vanille Kwarktaart

Voor de bodem
1 rol oreo's
1 eetlepel kokosolie (gesmolten)
samen in de keukenmachine tot er een pap onstaat, doe die in de springvorm als bodem (vetvrij papiertje er onder) doe in de koelkast moet uitharden. smeer de rand van de springvorm in met cocosolie of met slaolie, tenzij je van ijzersmaak houdt, dan laat je de olie achterwege.
Voor de vulling
500 gram volle kwark
bakje 200 gram philadelphia
150 ml melk
400 ml slagroom
+ extra slagroom voor garnering
4-5 el witte basterdsuiker (80 g)
blue berries
500 gram volle kwark met 200 gram philadelphia (bakje)
+ 4-5 el basterd suiker in een kom
roer met garde (niet met mixer mag niet te luchtig worden) tot egaal
haal de kern uit 1 vanille boon en doe de lege peul met de inhoud in 150 gram melk en laat lauw worden (laag gas, mag niet koken)
doe 8 blaadjes gelantine in ruim koud water en laat het zacht worden
klop 400 ml (2 pakjes inex van de jumbo) slagroom halfvast (tot lobbig en vrijluchtig en net piekjes die weer inzakken, mag absoluut geen vaste slagroom worden)
doe stokje uit de melk
doe gas uit en laat melk ietsje afkoelen en doe de uitgeknepen inmiddels gelantine er in, laat de gelantine in de melk oplossen. Als de gelantine niet oplost dan is de melk te verafgekoeld.
doe gelatine-vanille-melk in de kwark-phila-suiker en roer het er rustig door met garde of spatel, doe dit mengsel bij de room en wederom rustig mengen vooral geen schuim bellen maken. Doe het verkregen mengsel op inmiddels harde bodem, plaats in koelkast 5 uur
klop de extra slagroom tot er blijvende pieken onstaan (op de kop is net goed)
klodder op de taart, druk de berries er in en dan poedersuiker erover
klaar.
